Wine with Mango Sorbet

I have a Mango sorbet in the fridge.

With vanilla ice cream choosing a wine is easy. It has to be PX. But what wine should I drink with a Mango or any other Sorbet?

Sparkling?

Brut or Demi-Sec or sweet still?

High or low acid?

I wouldn't go low acid.
I suspect the bolder the better, and a botrytis affected wines will add other tropical fruit flavours that should be a safe match.
I reckon the idea of sweet fizz is an interesting one - perhaps a sparkling Canadian icewine?
